Kir’s, Casseroles and Revelations

Ouch !

It is fair to say that it is very rare for any bottle of wine in our home not to be guzzled there and then.

But, from a previous blog you may remember I am overstocked with a rather acidic Aligote 2007, the Kir trick works well but I have also tried freezing it in 200ml batches so I can use it in casseroles and risotto’s and amazingly that works too ! 

The alcohol itself doesn’t freeze but it seems to keep it fresh for at least a month.

Give it a go, it seems a great idea for mid week cooking
